Few ingredients, little work and such a TASTE! I can't believe it myself :) Dressing does all the work here, so it's not worth proceed to the topic without it.
Ingredients:
- 1 kg of hokaido pumpkin
- head of garlic
- 250 g of shallots
- 1 red pepper
- 100 g canned white beans
- salt, pepper, chili powder, smoked pepper, curry
- olive oil
dressing:
- 2 tbsp olive oil
- 1 tsp mustard
- 1 tsp lemon juice
- 1 tsp soy sauce
- 1 tbsp parsley or cilantro
- a few slices of chillies
Instructions:
- Preheat the oven to 200 degrees C.
- On the baking sheet place the sliced pumpkin with the skin, cloves of unpeeled garlic, shallots cut in half, beans and paprika in pieces.
- Add spices and olive oil.
- Rub the spices into the vegetables.
- Bake for 45 minutes.
- In the meantime, prepare a dressing (mix all the ingredients in a bowl).
- Pour the dressing over the finished dish.
- Sprinkle with fresh coriander or parsley.
