Everything what is green seems to be healthy, so I follow this trail and eat green vegetable salad with relish. Caramelized Brussels sprouts and refreshing dressing whet the appetite. I like to pack the salad in a veganbox or serve it for dinner. The cultivation of Brussels sprouts is very common in my village, that't why I often have it on my menu.

I try to prepare guacamole with different toppings, thanks to which I get a different taste every time. The version with dried tomatoes and capers is simply delicious. I serve it in the avocado skin, so it can be an impressive recipe for a starter on a special occasion. Guacamole is tasty with a slice of homemade bread. I prepared it outdoors at the Swords in Rock (norw. Sverd i fjell) in Stavanger. This monument, made by Fritz Røed, a Norwegian sculptor from Bryne, was unveiled by King Olaf V in 1983. It consists of three large swords stuck into a rock in memory of the battle in Hafrsfjord in 872, when Harald Fairhair defeated his rivals and unified Norway into one kingdom. The largest sword, 9.2 meters high, symbolizes the victorious king, and the two smaller ones represent the defeated rulers. The monument is also a symbol of peace. The swords were embedded in the rock so that they would never be used again.

In winter, it's not easy to find a suitable place outdoor to cook as low temperatures and freezing wind make it difficult. The lake, surrounded by trees, located high on a nearby island, was a bull's eye. Rennesøy is approximately 17 km from Randaberg (where I live) and you only need to pass two underwater tunnels to find yourself on the island. Then you drive road zigzags to the top of a small hill and you are already there. The shore of the frozen lake is a perfect place to spread out with our bits and pieces :) We also brought dry wood from the house and lots of kindling to make sure we can fire it up:)

Outdoor cooking in the cold is a big challenge (can you see the frost on the plate?). But the sun makes up for all the inconvenience. Mosterøy is an island located about 15 km from Randabergu (where I live). Only a short drive through an underwater tunnel, cross a bridge and it parks at the bottom of the small Mastravarden hill. Walk up the hill and enjoy the views!

Parmesan cheese is useful to me in many dishes, so I try to have it always at hand. Besides, it is so delicious that I use it not only for pasta but also for sandwiches, soups and salads. I keep ready-made vegan parmesan in the refrigerator, in a tightly closed jar, for up to 2 weeks. Must have it:)

Simple porridge without cooking. Just pour hot milk and boiling water over the ingredients and your breakfast is ready. You can easily prepare it outdoors. It will warm you up and give you energy. I tested the recipe on a walk during a winter morning, waiting for the sunrise on Randabergfjellet, a hill in Randabergu (Norway). This is one of my favorite "just around the corner" places. You can see the whole area, numerous islands, ships, the beach and farmers' fields. Time stops here, and thoughts do not run like crazy.
