GUACAMOLE WITH DRIED TOMATOES AND CAPERS


I try to prepare guacamole with different toppings, thanks to which I get a different taste every time. The version with dried tomatoes and capers is simply delicious. I serve it in the avocado skin, so it can be an impressive recipe for a starter on a special occasion. Guacamole is tasty with a slice of homemade bread.
I prepared it outdoors at the Swords in Rock (norw. Sverd i fjell) in Stavanger. This monument, made by Fritz Røed, a Norwegian sculptor from Bryne, was unveiled by King Olaf V in 1983. It consists of three large swords stuck into a rock in memory of the battle in Hafrsfjord in 872, when Harald Fairhair defeated his rivals and unified Norway into one kingdom. The largest sword, 9.2 meters high, symbolizes the victorious king, and the two smaller ones represent the defeated rulers. The monument is also a symbol of peace. The swords were embedded in the rock so that they would never be used again.

Ingredients:

  • 1 avokado
  • 3 dried tomatoes in oil
  • 5 cherry tomatoes
  • 1 tsp small capers
  • 1 tbsp lemon juice
  • 1 clove of garlic
  • parsley leaves
  • salt and pepper
  • 2 big capers

Instructions:

  1. Cut the avocado in half and remove the stone. 
  2. Gently take out the pulp so as not to damage the avocado peel.
  3. Add pulp to the bowl.
  4. Add diced dry tomatoes, garlic and lemon juice.
  5. Use a fork to mash them gently.
  6. Add capers, cherry tomatoes cut in half, salt and pepper.
  7. Mix them all together.
  8. Put the guacamole into the avocado peel.
  9. Sprinkle with parsley.
  10. Put big capers and a slice of lemon on top.
