I bought a giant kohlrabi at the local farmer's market. I used palm-sized patches as a base for this dish. It is important to cut the kohlrabi carefully before grilling to speed up the cooking process (you can use a regular or grill pan).


  • turnip cabbage (kohlrabi) slice (up to 1 cm thick)
  • 230 g canned red beans
  • salt
  • pepper
  • 1 clove of garlic
  • 1 tablespoon of tomato passata
  • 1/2 teaspoon of smoked paprika
  • 1 tablespoon of soy sauce
  • 1 pickled cucumber

  • rocket
  • plum
  • raspberries
  • basil oil


  1. Cut the kohlrabi into slices.
  2. Cut the slices into a grid, season with salt and pepper. 
  3. Sprinkle with olive oil.
  4. Grill the kohlrabi or fry it in a pan until it is lightly browned.
  5. Meanwhile,  prepare the rest of the ingredients.
  6. Pour 1 tablespoon of olive oil into the pan.
  7.  Add the drained beans and chopped garlic.
  8. Season with salt and pepper.
  9.  Cook for about 5 minutes.
  10. Add tomato passata, smoked paprika, soy sauce and a diced pickled cucumber. Stir.
  11. Put a slice of kohlrabi on a plate and put 2 tablespoons of beans with a cucumber on top.
  12. Side dishes: arugula, plums and raspberries.
  13. Sprinkle it all with basil oil.
