There are many recipes and books about muffins and it will probably be some time before I get to know them all. But is it even possible? For now, I am sharing the recipe for muffins with forest fruit. They taste delicious and look refined, which is why I recommend them for all kinds of family events. The weekend is approaching, it is worth preparing something sweet.


(10 muffins)
  • 250 g of flour
  • 1/2 tsp of baking soda

  • 225 ml of soy milk
  • 1/2 tbsp of apple cider vinegar
  • 1 banana (90 g)
  • 3 tbsp of oil
  • 4 tbsp of maple syrup
  • 70 g of forest fruit (frozen in my case)

  • powdered sugar for sprinkling


  1. Set the oven to 220 degrees C.
  2. Prepare 10 muffin liners.
  3. Put flour and baking soda into the bowl. Mix it thoroughly with a whisk and set aside.
  4. Put a banana in the second bowl and mash it with a fork.
  5. Add liquid ingredients: soy milk, apple cider vinegar, oil, maple syrup and forest fruits. Mix with a spoon.
  6. Put the dry ingredients into the wet ones and mix them with a spoon.
  7. Put muffin dough into muffin liners and bake for 20-25 minutes.
  8. Sprinkle with powdered sugar when they cool down.
