RED LENTIL SOUP

 

Red lentil soup I prepared outdoor in Gaudland (southern Norway) - located by a charming little lake. Fairy-tale surrounding, crunching snow, silence and blinding sun ... can you imagine more beautiful place for cooking?

Ingredients:

  • olive oil
  • 1/2 red onion
  • 1 clove of garlic
  • 1 cm fresh ginger
  • 1 tsp of salt
  • 1/2 tsp curry
  • 1/4 tsp smoked paprika
  • 200g red lentil
  • 600ml water
  • 200ml plant milk
  • parsley
  • vegan parmesan
  • homemade bread

Instructions:

  1. Pour olive oil to the pot.
  2. Add diced onion, garlic, ginger and cook until are soft.
  3. Add seasoning: salt, curry, smoked paprika. Cook a few minutes.
  4. Add red lentil and stir.
  5. Pour water and cook 10 minutes.
  6. Pour a plant milk and cook 5 minutes.
  7. Serve with parsley, vegan parmesan and homemade bread.
