PUMPKIN AND RED BRUSSELS SPROUTS WITH PHYSALIS


I have used physalis and red Brussels sprouts for the first time in my kitchen. Brussels' purple colour is amazing... I bought two packs at the first opportunity I got:)  I know the taste of physalis from my childhood, my grandma used to grow it in her garden. She said that it was raisins. Other names of physalis are: ground cherries, Inca berries, Cape gooseberries, poha berries, golden berries. They have sweet-winy flavour and beautiful, delicate leaves.

Ingredients:

(portion for 2-3 persons)
  • 1/2 pumpkin (butternut squash)
  • 1 onion
  • 400g red Brussels sprouts
  • soy sauce
  • maple syrup
  • olive oil
  • salt and pepper
  • smoked paprika
  • chilli powder
  • cumin
  • toppings: chives, lime, physalis

Instructions:

  1. Preheat oven to 200 C/392F.
  2. Slice the pumpkin (do not peel) and remove the seeds.
  3. Cut the Brussels sprouts in half and dice the onion.
  4. Put vegetables on the baking tray.
  5. Add spices, pour olive oil, maple syrup and soy sauce.
  6. Stir the ingredients well.
  7. Bake for 30 minutes or until the veggies are soft and brown.
  8. Garnish with chopped chives and serve with lime wedges for squeezing.
  9. Decorate with physalis.
