Ingredients:
(portion for 2-3 persons)
- 1/2 pumpkin (butternut squash)
- 1 onion
- 400g red Brussels sprouts
- soy sauce
- maple syrup
- olive oil
- salt and pepper
- smoked paprika
- chilli powder
- cumin
- toppings: chives, lime, physalis
Instructions:
- Preheat oven to 200 C/392F.
- Slice the pumpkin (do not peel) and remove the seeds.
- Cut the Brussels sprouts in half and dice the onion.
- Put vegetables on the baking tray.
- Add spices, pour olive oil, maple syrup and soy sauce.
- Stir the ingredients well.
- Bake for 30 minutes or until the veggies are soft and brown.
- Garnish with chopped chives and serve with lime wedges for squeezing.
- Decorate with physalis.
