This is a dinner recipe for eggplant lovers. One half of it is made by itself in the oven, so that meal is not time consuming at all.


  • 400 -500 g mini or regular large eggplant
  • salt and pepper
  • olive oil

  • 1/2 red onion
  • 1 clove of garlic
  • 1 cm of chili pepper
  • 1 cm of fresh ginger
  • 125 g of natural tofu
  • 1/2 teaspoon of sweet pepper
  • 1/2 teaspoon of smoked paprika
  • a pinch of chili pepper
  • 1 tablespoon of soy sauce
  • 1 teaspoon of maple syrup

  • parsley / cilantro
  • rice


  1. Set the oven to 200 degrees Celsius.
  2. Put chopped eggplant into a casserole dish.
  3. Season with salt and pepper. 
  4. Pour olive oil and stir.
  5. Bake for 30 minutes.
  6. Meanwhile, cook the rice and prepare the tofu.
  7. Heat the olive oil in a frying pan and add chopped onion, garlic, chili pepper and ginger.
  8. Fry over medium heat until softened (about 5 minutes).
  9. Add the diced tofu (you can marinate it in spices beforehand, but I always forget about it ...).
  10. Season with peppers and cook for a while.
  11. Pour soy sauce, maple syrup and cook for a moment.
  12. Mix the baked eggplant with the tofu.
  13. Serve with rice or any other side dish.
  14. Sprinkle with parsley or coriander.
