Edamame beans are cooked for about 4 minutes, pasta on average 7-8 minutes, so your dinner can be ready in less than 15 minutes. You can replace the beans with peas or broad beans.
Ingredients:
- pasta for two (in my case farfalle)
- 150 g of edamame
- 2 cloves of garlic
- 1 cm of chili pepper
- 3 tbsp of vegan cream (in my case soy 14%)
- 1 tbsp of lemon juice
- a bunch of dill
- olive oil
- salt and pepper
- chili flakes
Instructions:
- Cook the pasta and edamame according to the recipe on the package.
- Heat the olive oil in a frying pan and add chopped garlic and chili pepper.
- Fry over medium heat, making sure the garlic does not burn.
- Add the cooked beans, season with salt and pepper.
- Stir and cook for about 3 minutes.
- Add cooked pasta, cream and dill. Mix up the moment.
- Sprinkle with lemon juice.
- On the plate, sprinkle the finished dish with chili flakes.
