LIME LENTIL WITH TAHINI AND CASHEW



I gave my family the lime lentils for dinner, it would also work well as a side dish or as an addition to the main course. The smell of lime is mixed with aromatic garlic, and tahini in this company feels perfect. So if you have lentils in your cupboard, this is a good time to reach for it :)

Ingredients:

  • 1 onion
  • 2 tablespoons of olive oil
  • salt
  • 1/2 teaspoon of cumin

  • 1 cup of green lentils (dry)
  • 2 cloves of garlic
  • a pinch of chili flakes
  • 2 tablespoons of tahini
  • 1/2 lime juice
  • a handful of roasted cashews
  • a handful of parsley
  • for serving: lime wedges

Instructions:

  1. Boil the lentils in salted water, making sure it does not overcook (about 15 minutes).
  2. I strain and pour cold water.
  3. In a frying pan, I heat up the olive oil and add the sliced ​​onion.
  4. Season with salt and cumin. Stir and fry until translucent.
  5. I put the lentils in the bowl.
  6. I add the glazed onion (along with the pan oil) and the garlic pressed through the press.
  7. I throw in cashews, tahini and parsley.
  8. I sprinkle it with lime juice.
  9. I serve hot or cold with lime wedges.
