A forgotten packet of tofu from the fridge, a couple of mushrooms and onions. The three main ingredients are seasoned, fried and mixed to give a rich, full-bodied flavour.


  • 250 g of natural tofu
  • 1 tbsp of soy sauce
  • 1 tbsp of olive oil
  • a pinch of chili powder
  • grated skin from 1/2 lime
  • 1 cm of chili pepper
  • 1 cm of grated ginger
  • 1 tsp of maple syrup

  • 150 g of mushrooms
  • 4 spring onions
  • 1 clove of garlic
  • salt and pepper
  • 2 tbsp of olive oil
  • juice from 1/2 lime
  • a handful of cashews


  1. Put the chopped tofu into the bowl. 
  2. Add soy sauce, olive oil, chili powder, grated lime, chili pepper, grated ginger and maple syrup.
  3. Mix and set aside for 15-30 minutes.
  4. Meanwhile,  cut mushrooms, spring onions and garlic.
  5. Pour the olive oil in a frying pan. Add the mushrooms and fry for a while.
  6. Add spring onions and garlic. Season with salt and pepper (cook until softened).
  7. Put the tofu in the second frying pan and fry until browned.
  8. Combine the ingredients from two pans.
  9. Add cashews and lime juice. Mix.
