Creamy zucchini soup is very quick and easy to prepare. It takes less than 30 minutes and you can enjoy a hot meal. On a maximum crazy day, I need an express dish made of a few ingredients. I always remember this recipe, because it saved my honor in the kitchen more than once :)


(portion for four)
  • 50 g of onion
  • 50 g leek
  • 1 clove of garlic
  • 2 tbsp of olive oil
  • 700 g of courgette
  • 500 ml of water
  • 1 tsp of vegetable seasoning (grind dried vegetables with salt, turmeric, granulated garlic and store in a jar)
  • salt and pepper
  • 3 tbsp of thick coconut milk
  • 1 tbsp of nutritional yeast
  • 4 tbsp of roastet pumpkin seeds
  • chili flakes


  1. Pour some olive oil into a pot.
  2. Add diced onion, leek and garlic. Cook for a few minutes. Make sure nothing gets burned.
  3. Add the chopped courgette, stir and stew for a while.
  4. Add water (I pour the boiling water).
  5. Add spices.
  6. Cook for 15-20 minutes.
  7. Add coconut milk, nutritional yeast and blend into cream.
  8. Taste,  add salt and pepper as needed.
  9. Serve the creamy courgette soup with roasted pumpkin seeds and chilli flakes.
