Pasta dishes are a certainty, they always taste great and always ask for more :) And the preparation time does not exceed 30 minutes. In winter, I reach for frozen vegetables because I miss green beans and peas a lot. The cherry on the top in this recipe is vegan parmesan, which I also use in sandwiches, salads and soups.
Ingredients:
(for two or three person)
- 200 g green beans (frozen in my case)
- 7 cloves of garlic
- 10 cherry tomatoes
- 12 black olives marinated in salt (pitted)
- 2 cm of chilli peppers
- 4 tablespoons of olive oil
- a handful of parsley or cilantro
- for serving: chilli flakes, vegan parmesan, lime
Instructions:
- Cook the pasta according to the recipe on the package.
- In the meantime, cook the beans for about 5 minutes, drain them and put them on the grill pan.
- Sprinkle with olive oil and fry until the grill strips appear on each side of the beans.
- Heat up the olive oil in a frying pan, add chopped garlic, tomato halves and chilli pepper.
- Make sure the garlic does not burn. Finally, add olives.
- Drain the cooked pasta and add to the pan, mix thoroughly.
- Serve with grilled beans.
- Sprinkle with lime juice, parsley (coriander), chilli flakes and vegan parmesan .
