KALE SALAD


Why kale?

I hear all the time that it is healthy,  has a lot of vitamins,  goes well with green smoothies etc. But for me it was too hard and bland. I can recommend this salad with a clear conscience because it is TASTY!

What to serve the kale with?

I wanted to write about fish because that's how I give it to my non-vegan kids. I eat it with roasted vegetables, potatoes and sweet potatoes. It has a refreshing note thanks to the apple and lemon. It also works great with a slice of homemade bread.

Ingredients:

  • 100 g of kale, leaves only
  • 200 g of apples
  • 50 g of onion
  • a handful of parsley
  • 1 tbsp of maple syrup
  • 2 tbsp of olive oil
  • 50 g vegan yogurt (sometimes I skip when I don't have it)
  • 2 tbsp of lemon juice
  • salt and pepper

Instructions:

  1. Cut the kale leaves into pieces and put them in a bowl.
  2. Squeeze the lemon into a bowl of kale and knead it with hand, rubbing the lemon into the leaves (the kale will a juicy colour and become soften).
  3. Dice the apples and onions.
  4. Cut the parsley.
  5. Put all ingredients into the bowl and mix.
  6. Pour maple syrup, olive oil, yogurt, salt and pepper into a separate small bowl. Combine the ingredients.
  7. Pour the sauce over the salad and mix.

Tips:

The salad can be enriched with cranberries, raisins, a handful of walnuts or roasted sunflower seeds. Kale salad is perfect as a side dish.
